This Hot Honey Aperol Spritz is sweet, bubbly, citrusy, and just a little spicy. It takes the classic Aperol spritz and gives it a warm kick from hot honey syrup.
The lemon juice keeps the drink bright, while sparkling water and Prosecco make it light and fizzy. It’s refreshing for warm weather, with the right amount of spice to make it more interesting.

This is a quick cocktail to make for happy hour, brunch, patio drinks, or anytime you want something a little more interesting than the usual spritz. Garnish it with an orange slice and a tiny chili pepper, and it looks as good as it tastes.
What You Should Try This Hot Honey Aperol Spritz
Hot honey is a great match for Aperol because it balances that bittersweet orange flavor with some sweetness. Then Prosecco adds crisp bubbles, and lemon juice brings some tartness.
The hot honey syrup adds sweetness, body, and a gentle chili warmth, which is the whole package. And the key word here is gentle.
The spice shows up at the end of each sip, rather than taking over the whole flavor.

Hot Honey Syrup – Buy It Or Make It
When it comes to the hot honey syrup, you can definitely make your own, and I’ll include a recipe in just a second.
But there are good quality syrups you can buy, like the Cheeky hot honey syrup I’m recommending here. It’s made with real Grade A wildflower honey instead of a corn syrup base, which gives it a full, natural flavor.
And it’s already thinned just enough so it blends smoothly into the drink. You don’t want a layer of thick sticky honey at the bottom.
How to Make Your Own Hot Honey Syrup
If you prefer to make homemade hot honey syrup, and you can control both the sweetness and the heat. You only need honey, water and chili. Fresh chili, dried chili flakes, or even a small dried chile all work.
The recipe is flexible, but something like this:
Ingredients
- 1/2 cup honey
- 1/4 cup water
- 1 to 2 teaspoons red pepper flakes
Instructions
Add the honey, water, and pepper flakes to a small saucepan. Warm it over low heat and stir until the honey loosens and everything is combined. Do not boil it hard. Honey can lose some of its softer flavor if it gets too hot.
Once the mixture is warm, turn off the heat and let it sit for 10 to 20 minutes. The longer it sits, the spicier it gets. Strain out the pepper flakes, then pour the syrup into a clean jar or bottle.
Let it cool before using it in cocktails so it doesn’t melt the ice.
When to Serve
This is a fun drink for spring and summer, especially when you want something cold, fizzy, and not too heavy. It works well for brunch, backyard dinners, pool days, and casual happy hours.
The gentle heat also makes it a good choice for early fall, when you still want a spritz but want something with a warmer finish. It pairs nicely with salty snacks, cheese boards, grilled shrimp, pizza, fried chicken sliders, and spicy chips.
Because it’s quick to build right in the glass, it’s a good party cocktail. Set out the ingredients, garnishes, and a small pitcher of hot honey syrup so guests can make their own.
Pro Tips
Use chilled Prosecco and chilled sparkling water. This keeps the drink cold and fizzy without needing too much ice.
Add the Prosecco last. This helps keep the bubbles lively and prevents the drink from foaming over. Stir only once or twice after adding it.
If your hot honey syrup is very spicy, start with 1 ounce instead of 1 1/2 ounces. You can always add more. If it’s mild, the full amount gives the drink a nice rounded sweetness.
Fresh lemon juice is worth it here. Bottled lemon juice can taste flat or sharp, and this cocktail works best when the citrus tastes bright and clean.
For a less sweet version, cut the hot honey syrup to 1 ounce and add a little more sparkling water. For a stronger bitter-orange flavor, add another 1/2 ounce of Aperol.
