The Frozen Girl Scout cocktail recipe blends creme de menthe with delicious chocolate ice cream. And it’s a drink you just can’t go wrong with.

It’s mint. It’s chocolate ice cream. There’s some milk. But in the end, you know it’s going to taste just like those Thin Mint cookies Girl Scouts sell.

Except with alcohol. And that makes it just perfect for adults looking for candy drinks that remind them of childhood.

And for what it’s worth, you really cannot get this drink wrong. If you blend too long, it’ll be less thick. But it will still taste like heaven.

If you change the proportions a little, the worst that can happen is you get too little or too much mint flavor. You would fix that by just pouring a little more creme de menthe over the top, or by adding some chocolate syrup.

You can garnish it if you want, or not at all. Some whipped cream and a sprig of mint works well. Or a chocolate mint cookie. Or marshmallows and chocolate syrup. Anything you want, really.

Chocolate Ice Cream Choice Matters

Use a chocolate ice cream with a rich cocoa flavor. Dark chocolate, fudge, or chocolate truffle ice cream all work nicely.

Ice cream with chocolate chunks can work too, although it may leave small bits in the drink rather than blending completely smooth. But that’s not necessarily a bad thing!

Use Clear Creme De Menthe

Clear creme de menthe ensures the drink will be the exact chocolate brown you want it to be. Green creme will probably get lost and not affect the color, but it depends.

Choice of Milk

Whole milk makes the creamiest cocktail. Two percent milk also works well. Skim milk will make a thinner drink, while half-and-half makes it much richer.

For a dairy-free version, use a creamy oat milk or coconut milk ice cream. Oat milk usually has the most neutral flavor. Coconut milk also works well – it might add the slightest hint of coconut flavor, but that’ll just support the mint and chocolate.

How Much Milk to Add

The milk is the only ingredient without a set amount because ice cream brands vary a lot. Some are soft and fluffy, while others are dense and frozen solid.

You can always add more milk later, so start with 2 tablespoons of milk. That’ll make it a thick, spoon-ready drink.

Check it at this point. If you want it thinner you can add another tablespoon at a time. A good frozen cocktail should be thick enough to hold a straw upright for a few seconds, but not so thick that it is hard to sip.

If it gets too thin, add another scoop of ice cream and blend briefly. Letting the ice cream sit on the counter for about 5 minutes before blending also helps. It softens just enough to blend more easily without needing much extra milk.

Easy Garnish Ideas

Chocolate syrup looks great drizzled inside the glass before pouring in the cocktail. Swirl it around the sides, then place the glass in the freezer for a few minutes. The syrup will firm up slightly and stay in place better.

Whipped cream or marshmallows are always a good choice. Add a little of either on top, then finish with one of these:

  • Crushed chocolate mint cookies
  • Mini chocolate chips
  • Chocolate shavings
  • A fresh mint leaf
  • Crushed peppermint candy
  • A light dusting of cocoa powder

For a party, serve the drinks in chilled coupe glasses, martini glasses, or milkshake glasses. Wide glasses are especially handy because this cocktail is thick.

Flavor Variations

  • For a boozier drink, replace 1/2 ounce of creme de menthe with vodka.
  • To get a deeper chocolate flavor, add 1 tablespoon of chocolate syrup or chocolate liqueur.
  • Try chocolate peppermint ice cream instead of regular chocolate ice cream and add a spoonful of chocolate sauce. This version is especially good around the holidays.
  • For a more cookie-like shake, blend in one or two chocolate mint sandwich cookies.

Making It for a Group

This drink is best made one or two servings at a time, since you want the texture to be nice and think when you serve it.

For four servings, use:

  • 6 ounces crème de menthe
  • 12 scoops chocolate ice cream
  • About 1 to 2 cups milk, added gradually

Blend in two batches if your blender is not large enough. Keep finished drinks in the freezer for a few minutes while making the second batch. Don’t leave them too long, or they could become hard and icy instead of creamy.

For parties, you can set up a topping bar. Set out whipped cream, cookies, chocolate sauce, mint leaves, and sprinkles. Guests can finish their own drinks, which is fun for them and also saves a little work and makes the table look festive.
